Veggie Salad – Warm and healthy salad

Hello foodies,

Today I am sharing healthy veggie salad. It is warm salad recipe which is perfect for winter season.
This is very quick and easy salad recipe. I used green veggies, carrots and potatoes in this recipe.
Try this hot salad in this weather.





Recipe will serve 2

Ingredients:-


Broccoli – ¼ cup
Carrot - ¼ cup
Sliced onion – ¼ cup
Green beans – ¼ cup
Boiled potatoes – ½ cup
Tomato - 1
Olive oil – 2 tbsp
Italian seasoning – ½ tsp
Black pepper powder – ¼ tsp
Red chili flakes – ¼ tsp
Garlic powder – ½ tsp
Lemon juice – 1 tsp
Turmeric powder – a pinch
Salt as per taste 
Salad dressing – 1 tbsp (I used ranch)

Directions:-
 









1) Dice all veggies and wash in running water.
2) In a microwave safe bowl add water and diced veggies and boil it for 3 mins in microwave.
3) Drain water from veggies.
4) Heat olive oil in pan and add sliced onion.
5) Sauté onion in oil for 1 min.
6) Now add boiled potatoes and cook it for 2 mins. Don’t remove the skin of potatoes; it will give nice taste in salad.
7) Add all the veggies and let it cook for 3-4 mins.
8) Now add Italian seasoning, red chili flakes, salt, turmeric powder, garlic powder, lemon juice and black pepper powder. Mix well with salad.
9) Let it cook for about 1-2 mins.
10) Switch off the flame and add chopped tomatoes and mix well with the salad.
11) Transfer the salad in serving bowl and garnish it with ranch or your choice of salad dressing.
12) Serve hot and enjoy.

Shahi Tukda: - Quick Dessert Recipe


Hi Foodie,

Today I am sharing quick and easy recipe with you: Shahi Tukda. I made this recipe with crispy bread served with rabri (milk pudding).

Ingredients:-

Milk – 2 cups
Cardamom powder – ¼ tsp
Saffron threads – 3-4
Condense milk – 3/4 cup
Chopped nuts - ½ cup (I used almonds, pistachios and cashews)
Whole wheat bread – 3 slices
Clarified butter/ Ghee – 3-4 tbsp

Directions:-








1) Heat milk in deep bottom pan. When milk comes to boiling point add cardamom powder and saffron threads and stir well.
2) Now add condense and milk and let it boil for 10 – 15 mins and slow flame.
3) Stir the mixture in every 5 mins interval.
4) We need thick consistency for rabri, so let the milk mixture boil until you get rabri consistency.
5) After 10 – 15 switch off the flame and let the mixture cool down completely.
6) Cut the bread slice in square shape.
7) Heat ghee in a pan in shallow fry the bread slice until golden brown in color.
8) Pour the rabri in a serving plate.
9) Now place the crispy bread slices on top of it.
10) Now again Pour the rabri on top of bread slices.
11) Garnish it with chopped nuts.
12) Serve hot or cold.

My Notes:-

1) You can use your choice of nuts in garnishing.
2) For making rabri you can also use grated paneer /cottage cheese to thicken the rabri.
3) You can serve this dessert with hot or chilled rabri.

Makki di Roti n Sarso ka Saag: Authentic Punjabi Recipe

Winter is here and today I am sharing Punjabi recipe which is perfect for this weather – Makki di Roti and Sarso ka Saag.
I made sarso saag using mustard and spinach leaves and served with makki roti (corn roti). Enjoy this recipe in this wintery season.

Ingredients:-


For Makki di Roti:-

Makki flour (corn flour) – 1 ½ cups
Wheat flour – ½ cup
Salt as per taste
Water – for kneading the dough
Ghee – for greasing the rotis

For Sarso ka Saag:-

Mustard leaves – 1 bunch
Spinch leaves – 1 bunch
Onion – 1 roughly chopped
Tomatoes – 3 roughly chopped
Garlic cloves - 4-5
Green chilies – 3 roughly chopped
Red chili powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Salt – as per taste
Garam masala – ¼ tsp
Corn flour – ½ tsp
Oil – 2 tbsp
Water – ½ cup
Cumin seeds – ½ tsp
Finely chopped onion – ½ cup

Directions: - For Makki Ki Roti 












1) In a mixing bowl add all ingredients except water and mix well.
2) Now add little water at a time knead the dough.
3) Cover the dough and let it rest for about 15 mins.
4) After 15 mins divide the dough in equal parts and make lemon size round balls.
5) Take one ball and make thick 6 inch round circle out of it.
6) Heat the griddle and cook it from one side.
7) Turn the roti and apply ghee/ butter on it.
8) Again turn the roti and apply ghee/ butter on the other side of roti.
9) Cook until roti become crispy.
10) Serve hot with Sarso ka Saag.




Directions: - For Sarso Ka Saag















1) Wash mustard and spinach leaves in running water.
2) Roughly chop the spinach and mustard leaves.
3) Now in a pressure cooker add mustard leaves, spinach leaves, tomatoes, roughly chopped onion, green chili, red chili powder, turmeric powder, coriander powder, garam masala, garlic clove salt and water. Let it cook for 3 whistles.
4) Open pressure cooker after cool down completely.
5) Now let the mixture cool down completely.
6) Add this mixture in blender and blend into a smooth paste.
7) Now heat the heavy bottom pan and add the paste in it.
8) Add corn flour and mix well.
9) Let the paste boil for about 4-5 mins.
10) Heat oil in another small pan and add cumin seeds.
11) When seeds crackled add finely chopped onion and mix well.
12) Let the onion cook for about 2 mins and this tempering in saag paste.
13) Mix well and let it cook for 10 mins on slow flame.
14) Serve hot saag with hot Makki Roti.
