Summer is here, so today I am sharing summer special and quick dessert recipe: Mango Shrikhand. It is very easy to make and very delicious in taste.Shrikhand can be make in three ways. Plain Shrikhand, Kesar Shrikhand and Mango Shrikhand.
I made this shrikhand with Mango pulp,kesar(saffron),pistachios and hung curd. hung curd is very easy to make at home. Enjoy your summer with yummy and chilled dessert.
Ingredients:
Hung Curd - 2cups
Powdered Sugar - 2 ½ cups
Mango Pulp - 1 ½ cups
Saffron - few threads
Warm Water - 2 tbsp
Chopped Pistachios - 1/4 cup

Warm Water - 2 tbsp
Chopped Pistachios - 1/4 cup
Directions:-
- Hung curd is basically yogurt drained all its water. For making it tie 1 kg curd/yogurt in muslin cloth and leave it hanging for overnight and squeezed out all of its remain water with the help of hands.
- Soak saffron threads in warm water for about 15 mins.
- Now make mango puree in mixture jar. I used kesar mango for pulp.
- Now take a large mixing bowl and add hung curd in it whisk it well.
- Add powdered sugar and again whisk it well.
- Add mango puree, saffron and chopped pistachios and mix it for about 10 mins.
- let the shrikhand chill in refrigerator for at least 7-8 hours.
- Serve chill and enjoy.
- Serve shrikhand with pori. Some people love the combination of pori and shrikhand.
- you can add other nuts as per your taste, like almond, cashews etc.
