Baklava Cake

Hello Foodies,

Baklava is very popular and mouthwatering Turkish dessert. Baklava is a layer of chopped nuts placed on multiple layers of phyllo pastry sheet dipped in sugar syrup. Today I am sharing delicious cake recipe with baklava.  Basically I made cinnamon and nuts cake layered with baklava.
I made this cake on my wedding anniversary. Enjoy this delicious cake recipe.








For Cake:-

All-purpose flour – 1 ½ cups
Baking powder – ½ tsp
Baking soda – ½ tsp
Cinnamon powder – ½ tsp
Salt – a pinch
Vanilla essence – few drops
Sugar – ¾ cup
Chopped nuts – ½ cup (I used pecans and walnuts)
Melted butter – ¼ cup+ greasing the pan
Lemon juice – 1 tbsp
Milk – ½ cup

For Baklava:-
Phyllo sheets – 16(store bought)
Chopped nuts (I used pistachios, almonds and cashews)
Melted butter – ¾ cup

For honey – sugar syrup:-

Sugar – ¾ cup
Water – ½ cup
Honey – ¼ cup
Lemon juice – 1 tbsp

Directions for Cake:-












1) Preheat the oven at 350 degree F.
2) In a mixing bowl sift all dry ingredients (first five) and mix well.Add nuts in dry ingredients and mix well.
3) In another mixing bowl add sugar and milk. Whisk it well until sugar completely dissolved.
4) Add vanilla essence and mix with mixture.
5) Now add sifted dry ingredients in sugar- milk mixture and mix well.
6) Add melted butter and mix well.
7) Now add lemon juice and again mix well with cake batter.
8) Now grease 6 inch round cake pan with butter and pour the batter in pan.
9) Bake the cake for 30- 35 mins or until done.
10) After 30 – 35 take tooth pick test, if tooth come out clean then cake is done.
11) Take out the cake from oven and let it cool down completely.
12) After cool down carefully layer the cake from middle and set aside.

Directions for Baklava:-







1) Preheat oven at 350 degree F.
2) Take 8 sheets of phyllo and cut it in 6 inch round circle.
3) Grease the 10 inch baking pan and place one sheet in the pan.
4) Grease the sheet with melted butter. Repeat the same step for four sheets.
5) Now place chopped nuts on 4 sheets and again stack the rest of 4 phyllo sheets on top the nuts.
6) Don’t forget to grease every phyllo sheets with butter.
7) Now take another pan and repeat the same step and stack one more layer of baklava with 8 sheets.
8) Now bake both the baklava layer in the oven for 20 mins or until golden brown in color.

Direction for sugar syrup:-





1) In deep bottom pan add sugar,honey and water and let it cook for 10 mins
2) When mixture starts boiling add lemon juice and stir continuously for 3-4 mins
3) Now let the mixture cook on slow flame for 5-6 mins.
4) Switch off the flame and let the syrup cool down completely.

Assembling the cake:-





1) Place one cake layer and apply 2 tbsp sugar syrup on top of it.
2) Now place one stake of baklava on top of cake.
3) Apply sugar syrup on it.
4) Again place another layer of cake and apply sugar syrup on top of it.
5) Now arrange another stake of baklava on top of the cake. Again apply sugar syrup on Baklava.
6) Now garnishing the top with chopped nuts.
7) Enjoy this yummy cake.

My Notes:-

1) You can use your choice of nuts for baklava.

Kidney Beans Vegetable Stew – Winter Warmer Recipe

Hello foodies,

Winter is here and everyone loves warm soup and stew in this season. So, today I am sharing a healthy stew recipe - Kidney Beans Vegetable Stew.
I made this stew with kidney beans, veggies and some spices. This is very east stew recipe. Enjoy this winter with this tasty and healthy stew.





Recipe will serve 2

Ingredients:-

Kidney beans – ½ cup (soak overnight)
Medium size diced potatoes – 1
Diced carrots – 1
Diced onion – ½
Finely chopped garlic cloves – 3
Roughly chopped spinach – ½ cup
Mixed vegetable juice – 1 cup(store bought)
Lemon juice – 1 tbsp
Black pepper powder – ½ tsp
Chili flakes – ½ tsp
Mixed herbs – ½ tsp
Olive oil – 2 tbsp
Salt as per taste

Directions:-
 















1) Pressures cook kidney beans for 4 whistles.
2) Heat olive oil in deep bottom pan and add chopped garlic. Sauté it for 30 sec.
3) Now add chopped onion and mix well. Let it cook for about 2 mins.
4) Now add chopped potatoes and carrots and again mix well.
5) Add salt and pepper and mix well with the veggies.
6) Add mixed vegetable juice and stir it well for 2 mins
7) Now add chili flakes and dried mix herbs.
8) Mix well and cover the lid of the pan.
9) Let it cook for about 10 mins on medium flame.
10) Remove the lid and again let the stew boil for 5-7 mins or until all the veggies completely cooked.
11) Now add spinach and stir well with stew.
12) Now again let the stew cook for about 10 min on slow flame.
13) Serve hot with bread sticks.

My Notes:-

1) You can add your choice of veggies in stew.
2) You can use vegetable broth in place of vegetable juice.

Sattu Paratha with Aaloo Curry

Last month I shared Litti chokha recipe.  For Stuffing in litti I used sattu. Today I am sharing another recipe with sattu. I made Sattu Paratha served with aaloo curry. Enjoy this delicious recipe with authentic flavors of Bihar.







Recipe will serve 2

Ingredients:-

For Making Dough:-


Whole wheat flour – 3 cups
Semolina/ Suzi – ¼ cup
Oil – 2 tbsp+ for brushing the paraths
Salt as per taste
Water – 2 ½ cups.
For Sattu:-
Sattu – 1 cup
Finely chopped onion – 1/2 cup
Chopped cilantro leaves – ¼ cup
Finely chopped green chili – 2-3
Oil – 2 tbsp
Pickle masala – 2 tbsp( I used mango and tomato pickle masala)
Finely chopped ginger – 1 tsp
Carom seeds – ½ tsp
Lemon juice – 1 tsp

For Aaloo Curry:-
Potatoes – 3-4
Chopped Green chilies – 2
Oil – 2 tbsp
Cumin seeds – ½ tsp
Onion seeds – ½ tsp
Turmeric powder – ¼ tsp
Red chili powder – ½ tsp
Dry mango powder – 1 tsp
Coriander powder – ½ tsp
Water – 2 cups
Salt as per taste
Chopped coriander leaves - 2 tsp

Directions:-



















1) In a Mixing bowl add all above mentioned ingredients for making dough except water and mix well. Using enough knead soft paratha dough. Cover the dough with wet cloth and set aside.
2) In another bowl add all above mentioned sattu ingredients and mix well.
3) Now divide the dough in equal parts and make golf size balls.
4) Heat the griddle and take one dough ball and make small two inch round chapati out of it.
5) Now take small chapati on your palm and stuff one tbsp stuffing in it.
6) Cover the edges and again make round shape ball.
7) Now using rolling pin make 6 inch round circle paratha.
8) Cook the paratha in preheat griddle from both the sides by applying little oil.
9) Cook the paratha until golden brown in color.Repeat the same steps with rest of the dough.
10) Dice the potatoes and add 2 cups of water
11) Pressure cooks the potatoes for 3 whistles.
12) Heat oil in frying pan and add onion seeds and cumin seeds.
13) When seeds crackled add all above mentioned dry spices, green chilies and salt.
14) Mix well and add this tempering in boiled potatoes.
15) Stir well and let the curry cook for about 10 mins on slow flame.Garnish aaloo curry with coriander leaves
16) Serve hot with hot sattu paratha.
