Sattu Paratha with Aaloo Curry

Last month I shared Litti chokha recipe.  For Stuffing in litti I used sattu. Today I am sharing another recipe with sattu. I made Sattu Paratha served with aaloo curry. Enjoy this delicious recipe with authentic flavors of Bihar.

Ingredients:-

For Making Dough:-


Whole wheat flour – 3 cups
Semolina/ Suzi – ¼ cup
Oil – 2 tbsp+ for brushing the paraths
Salt as per taste
Water – 2 ½ cups.
For Sattu:-
Sattu – 1 cup
Finely chopped onion – 1/2 cup
Chopped cilantro leaves – ¼ cup
Finely chopped green chili – 2-3
Oil – 2 tbsp
Pickle masala – 2 tbsp( I used mango and tomato pickle masala)
Finely chopped ginger – 1 tsp
Carom seeds – ½ tsp
Lemon juice – 1 tsp

For Aaloo Curry:-
Potatoes – 3-4
Chopped Green chilies – 2
Oil – 2 tbsp
Cumin seeds – ½ tsp
Onion seeds – ½ tsp
Turmeric powder – ¼ tsp
Red chili powder – ½ tsp
Dry mango powder – 1 tsp
Coriander powder – ½ tsp
Water – 2 cups
Salt as per taste
Chopped coriander leaves - 2 tsp

Directions:-



















1) In a Mixing bowl add all above mentioned ingredients for making dough except water and mix well. Using enough knead soft paratha dough. Cover the dough with wet cloth and set aside.
2) In another bowl add all above mentioned sattu ingredients and mix well.
3) Now divide the dough in equal parts and make golf size balls.
4) Heat the griddle and take one dough ball and make small two inch round chapati out of it.
5) Now take small chapati on your palm and stuff one tbsp stuffing in it.
6) Cover the edges and again make round shape ball.
7) Now using rolling pin make 6 inch round circle paratha.
8) Cook the paratha in preheat griddle from both the sides by applying little oil.
9) Cook the paratha until golden brown in color.Repeat the same steps with rest of the dough.
10) Dice the potatoes and add 2 cups of water
11) Pressure cooks the potatoes for 3 whistles.
12) Heat oil in frying pan and add onion seeds and cumin seeds.
13) When seeds crackled add all above mentioned dry spices, green chilies and salt.
14) Mix well and add this tempering in boiled potatoes.
15) Stir well and let the curry cook for about 10 mins on slow flame.Garnish aaloo curry with coriander leaves
16) Serve hot with hot sattu paratha.
