Saffron Coconut Barfi

Hello Foodies,

Diwali is coming soon. Everyone stared the preparations for festival of lights. Diwali is not complete without sweets. So, here is the delicious dessert recipe from Bhawna’s kitchen - Saffron Coconut Barfi.

I made this dessert with low fat condense milk and fresh coconut. This is very quick and easy sweet recipe. Enjoy this festival with yummy barfi.








Ingredients:-

Fresh coconut – 1 (Big)
Low fat condense milk – 1 can (14 oz)
Saffron threads– 4 -5
Clarified butter/Ghee – 3 tbsp
Cardamom pods – 2-3
Milk – 2 tbsp
Sliced pistachios – for garnishing

Directions:-
 










1) Remove the skin from coconut and great with the help of grater.
2) Heat oil in broad pan and add coconut in it.
3) Let it cook for 3-4 min on very slow flame.
4) Crush cardamom seeds in mortar pestle and make coarse powder. Using fresh cardamom powder gives nice aroma.
5) Now add cardamom powder and stir with coconut mixture.
6) Let it cook again for 2 mins.
7) Add low fat condense milk and stir well with coconut mixture.
8) Crush the saffron threads with the help of mortar &pestle.
9) Take 2 tbsp warm milk in bowl and saffron thread in it and mix well.
10) Now this in coconut and condense mixture. Stir well with mixture.
11) Saffron gives nice and beautiful color and aroma to our dessert.
12) Let it cook for about 10 mins on slow flame.
13) One Clarified butter ooze out from mixture switch off the flame.
14) Transfer the mixture in pre greased pan and spread it evenly in pan.
15) Let the mixture cool down for 10 mins
16) Now with help of sharp knife, cut your desire shape pieces of barfi because once the mixture down completely it’s difficult to cut the pieces from it.
17) Garnish the barfi pieces with sliced pistachios.
18) Let the mixture cool down completely. It will take more than two hours.
19) Enjoy the yummy barfi.
