Today I am sharing delicious south Indian entrée recipe – Bhindi ka Salan. I made this recipe with some south Indian spices and fried okras. Enjoy this recipe.
Recipe will serve 2
Ingredients:-
Bhindi /okra – 9-10
Coconut powder – 1 tbsp
Peanuts – 2 tbsp
Sesame seeds – 1 tbsp
Garlic cloves – 3
Ginger – ½ inch cube
Green chilies – 2
Dried red chilies – 2
Curry leaves – 7-8 leaves
Coriander leaver – 1 tbsp
Sliced onion – ½ cup
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Fenugreek/ methi seeds -1/2 tsp
Coriander powder – ½ tsp
Red chili powder - 1 tsp
Turmeric powder – ½ tsp
Tamarind juice - ½ cup
Jaggery / gud – 1 tsp
Water – ½+ ½ cup
Oil – 2 tbsp + for frying okra
Salt as per taste
Directions:-
1) In a pan dry roast peanut, sesame seeds and coconut powder for 4-5 mins on slow flame.
2) Switch off the flame on add ginger, garlic cloves and green chilies. And let the mixture cool down. Now add ½ cup water and ground it into smooth paste.
3) Heat deep bottom pan and deep fry bhindis .
4) Take out the excessive oil from pan and add cumin seeds, mustard seeds, methi seeds, curry leaves and dried red chilies. Stir well.
5) Now add sliced onion and mix it well.
6) Now add ground paste and let it cook for 5-6 mins.
7) Now add all dry spices and mix well with ground paste.
8) Add ½ cup water and let the mixture cook for 10 – 15 mins on medium flame.
9) Now add jaggey and tamarind juice and mix. Again cover the pan and let it cook for another 10 mins on slow flame.
10) Now add fried okras and mix well in gravy. Cover the pan and cook it on slow flam for about 4-5 mins.
11) Now add chopped coriander leaves and mix well.
12) Serve hot with paratha/roti/rice.
