Rajasthani Gatte ki Sabji

Today I am sharing very popular Rajasthani dish: Gatte ki Sabji. Gatta is made with besan/chickpeas flour and gravy is made with yogurt and some spices. This dish is made with ghee which gives very nice aroma and rich taste. Enjoy this recipe.

Ingredients:-


For Gattas:

Besan/chickpeas flour (course) – ½ cup
Carom seeds – ¼ tsp
Red chili powder – ½ tsp
Turmeric powder – ¼ tsp
Coriander powder – ½ tsp
Salt as per taste
Asafetida – a pinch  
Oil – 2 tbsp
Water – for boiling gattas + kneading the dough

For Gravy:-

Yogurt – ½ cup
Besan /chickpeas flour – 1 tsp
Red chili powder – ½ tsp
Turmeric powder – ¼ tsp
Coriander powder – ½ tsp
Ginger garlic paste – 1tbsp
Garam masala – ¼ tsp
Salt – as per taste
Ghee – 4 tbsp
Cumin seeds – ½ tsp
Mustard seeds – ½ tsp
Chopped coriander leaves – 2 tbsp

Directions:-

1)      In a mixing bowl add all above mentioned ingredients for gattas except water and mix well.
2)      Now add little water at a time and knead medium soft dough.
3)      Let the dough rest for about 10 minutes.
4)      Now divide the dough in equal parts and make cylinder shape out of it.
5)      In deep pan boil water and add gattas in it.
6)      Let it boil for about 15 minutes.
7)      Once the gatta are done take out the gattas out of pan and let it cool down completely.
8)      Save the boiled water for gravy.
9)      For gravy take mixing bowl and add yogurt, besan, red chili powder, turmeric powder, coriander powder, and salt and garam masala.
10)   Whisk it well and make sure there is no lump in the batter.
11)   In a deep sauce pan add ghee.
12)   Now add cumin seeds and mustard seeds.
13)   Once the seeds crackled add ginger garlic paste and mix well.
14)   Now add yogurt gravy in it and mix well.
15)   Keep stirring the gravy for about 5-6 minutes.
16)   Once ghee ooze out of the gravy add boiled water and let it boil for 7-8 minutes.
17)   Now add gattas in the gravy and let it boil again for 5-6 minutes.  
18)   Now add chopped coriander leaves and serve hot with paratha/ roti.
