Today I am sharing yummy tiffin recipe with you - Crunchy Veggie Frankie. This is easy and quick recipe. I added Pringles potato chips in the mixed vegetable filling. Enjoy the new version of frankie!!!
Yield: - 4 Frankies
Ingredients:-
For making dough:-
Whole wheat flour – 1 ½ cups
Semolina/ Suzi – ¼ cup
Ghee/ clarified butter – 2 tsp
Salt as per taste
Water – 2 cup
For filling:-
Finely chopped vegetables – ¾ cup (I used cabbage, carrot, onion, green bell pepper and onion)
Boiled and mashed peas – 4 tbsp
Black pepper powder – ½ tsp
Chaat masala – ½ tsp
Blue cheese ranch – 3 tbsp( store bought)
Chili flakes – ½ tsp
Salt as per taste
Potato chips – 10- 12(I used pringles )
Butter – 4 tbsp
Mozzarella cheese – 3 tbsp
Directions:-
1) In a mixing bowl add all dry ingredients together, mix well and knead soft dough
2) Let the dough rest for 15 mins.
3) In a mixing bowl add all above mentioned chopped vegetables and mashed peas. Mix well.
4) Now add black pepper powder, chili flakes, salt, chaat masala and blue cheese ranch and mix it again.
5) Now divide the dough in equal parts and make equal golf size balls out of it.
6) Make 10 inch chapati out of the balls.
7) Now heat griddle and lightly cook all chapaties and set aside.
8) Take one chapati and place little filling in the middle of it.
9) Now arrange potato chips on the top of filling.
10) Start rolling the chapati in a shape of wrap and add grated mozzarella cheese at the end of the roll. It will act as glue for our frankie.
11) Repeat the same with all chapatis. Apply butter on frankies and cook it on griddle for 2-3 mins.
12) Serve hot with your choice chutney or dip.
