Bharwa Baingan: - Eggplant Stuffed with Peanut and Sesame Masala

Hello Foodies,

Everyone likes Bharwa Baingan but today I am sharing this recipe with little twist in stuffing. I made Eggplant Stuffed with Peanut and Sesame Masala with little South Indian flavor. Enjoy this recipe.



Recipe will serve 2

Ingredients:-


Eggplants/Baingan – 5-6 (small size)
Peanuts – ¼ cup
Sesame seeds – 4 tbsp
Red chili powder – 1 tbsp
Turmeric powder – ½ tsp
Coriander powder – 1 tbsp
Sambhar Masala – 1 tbsp
Garam masala – ¼ tsp
Chopped coriander leaves- 2 tbsp
Finely chopped garlic cloves – 2
Dried mango powder – ½ tsp
Salt as per taste
Oil – 3 tbsp+ 1 tbsp
Cumin seeds – ½
Water – ¼ cup

Directions:-
 




1) Wash eggplant in running water and make two intersecting diagonal cuts on the bottom of each eggplant. Don’t cut all the way through and be sure to leave stems on. Soak the eggplants in water.
2) Dry roast peanuts and sesame seeds separately and remove the skin of peanut.Grind into powder in mixture.
3) In a mixing bowl add peanut- sesame powder.
4) Now add all above mentioned dry spices, salt, coriander leaves, garlic cloves and 1 tbsp oil. Mix it well.
5) Wash eggplant in running water and make two intersecting diagonal cuts on the bottom of each eggplant. Don’t cut all the way through and be sure to leave stems on.
6) Now stuff filing in each eggplant.
7) Heat oil in pan and add cumin seeds. When the seed crackles add stuffed eggplants.
8) Turn occasionally with the help of spoon and let the eggplant cook for 10 mins or until cook from all sides.
9) Now add water and cook it again for 7-8 mins.
10) Serve hot with naan or chapati.
